CHICKEN QUESADILLAS

Ingredients:

2 Boneless Skinless Chicken Breasts                 ½ Onion diced

4 Large Soft Tortillas                                          ½ Bell Pepper diced

¼ Tsp of Crushed Red Pepper (Optional)             Onion Powder

Garlic Powder                                                   Black Pepper

Olive Oil

2 Cups Shredded Queso Oaxoca or Queso Asadero

Directions:

Pre-Heat oven to 350 degrees. Massage 2 Tbsp of oil onto chicken breasts and lightly dust with crushed red pepper, onion, garlic powder, and pepper. Bake for 45 minutes to 1 hour, depending on thickness of the chicken.  Slice chicken into small strips.

While chicken cooks, dice onion and bell pepper.  Using a skillet and 1 Tbsp of oil, sauté onion and bell pepper until slightly tender.  On a cookie sheet, lay out 2 tortillas. Spread 1 Cup of cheese per tortilla, layer strips of chicken with onion and bell pepper on each.  Cover with second tortilla.  Bake for 15 minutes or until cheese is melted.
