CHICKEN SALAD

Ingredients:

2 Boneless Skinless Chicken Breasts

½ Medium Onion

½ Medium Bell Pepper

1 Cup Mayonnaise

2 Tbsp Yellow Mustard

3 Tbsp Chopped Pecans (Optional)

Directions:

Boil Chicken for 30 minutes. Pour out hot water. Chop up Chicken and set aside to cool.

Dice the onion and bell pepper into small pieces.

Combine Chicken, Diced Onion, Diced Bell Pepper with 1 cup of Mayonnaise, 2 Tbsp of Yellow Mustard and pecans. Stir until combined and creamy. Can add more Mayo or Mustard to taste.  Chill and serve.
