ChILI CHEESE BURRITOS

Ingredients:

1/2 lb Ground Beef                                    1 Tsp Black Pepper

1 Cup Dried Black Beans                          1 Tsp Garlic Powder

1/2 Onion, chopped                                  1 Tsp Onion Powder

1/2 Bell Pepper, chopped                          2 Tbsp Chili Powder

2 Cans Tomato Sauce (No Salt Added)      1/4 Tsp Cheyenne Pepper Powder

3 Cup Water                                            1/2 Tsp Ground Cumin

Cheddar Cheese

Flour Tortillas

 

Directions:

Boil the Black Beans on Medium High Heat in a pot with about 2 cups of water, until slightly tender. Time varies depending. Approximation is 1 to 1.5 hours. Remove from heat and drain. Set aside. Do not add any seasoning.

Fry Ground Beef in a deep skillet until brown. Add Tomato Sauce, 1 Cup of Water, Onion, Bell Pepper, Black Pepper, Cumin, Garlic and Onion Powder, Chili Powder, Cheyenne Pepper and Black Beans.  Lower Heat on stovetop to low. Cover and Simmer for 2 hours. Stiring occasionally to prevent sticking. Add additional water as needed in 1/2 cup intervals.

Heat a flat skillet on the stove (I use cast iron - it retains heat) on Medium Heat. Heat the Tortillas 1 minute per side. Add Cheddar Cheese (small handfuls). Layer Chili over the top of the Cheese. Remove from the skillet. Fold in the ends of the Tortilla and roll until sealed.
