STUFFED CHICKEN WITH GOAT CHEESE AND SPINACH

Ingredients:

2 – Medium Skinless Boneless Chicken Breast                        1 cup of Balsamic Vinegar

1 cup of Raw Baby Spinach                                              Black Pepper

½ cup of Goat Cheese (small chunks)

Toothpicks

Directions:

Marinate Chicken in the Balsamic Vinegar overnight.  Pre-heat oven to 350 degrees. Butterfly 2 chicken breasts. Careful not to cut all the way through into halves. Layer Raw Spinach on the inside of the chicken.  Put a nice thin coat of Goat Cheese on top of the Spinach.  Seal the upper and lower portions of chicken with Toothpicks.  Lightly dust with Pepper.  Put the chicken in a non-stick oven safe pan and bake at 350 degrees for 1hr 10 minutes
